About Nicolas Appert
Many have argued that Nicolas Appert’s work as a confectioner helped him to develop the technique of preserving food in a closed container. The inventor is credited for introducing the canning method of storing food. Though it was suggested that the method was already in use at homes, historians have indicated that the Appert was the first to do it on a large scale.
In his first experiment, he stored the food in a glass and closed it with sealing wax and a cork. He later placed it in boiling water. In 1810, he published a book titled “The Art of Preserving Animal and Vegetable Substances (L'Art de conserver les substances animales et végétales)”.
