About Ruth Fertel
From being a single mother of teenage boys to owning one of the world's largest restaurant chains, American businesswoman Ruth Fertel can be described as the embodiment of integrity and hard work. The founder of Ruth's Chris Steak Houses, her story has inspired countless women across the U.S.
Fertel graduated from Louisiana State University at the age of 19. By the age of 31, she was a divorced mother of two boys and needed more than her low salary to support her family.

This New Orleans lab technician ignored the advice of her bankers and family, she mortgaged her house and bought a restaurant she saw in an ad. Selling her steaks at $5 each, she doubled her salary within a month. Fertel was committed to the business and it grew into a franchised restaurant. She lent a helping hand to single mothers by employing them so they could support their families.
This small town chemist became known as “The First Lady of American Restaurants” or “The Empress of Steak”. Fertel received numerous awards, including “Entrepreneur of the Year” from the Horatio Alger Association in 1995.
Restaurants and Institutions Magazine honored her with “Executive of the Year” award.
She died of lung cancer in 2002, aged 75.
